Let's face it, lunch can be the best meal of your day. Because it's usually "your" meal. You are probably not making lunch for the whole family. Kids are in school. Maybe one of you is WFH, maybe the other in the office. Either way, you likely have some leeway to make this meal your......

Which is why, maybe, you don't pay a ton of attention to it.

Here's another idea....

Here are 5 lunch recipes for you, all with the base of quinoa. These are entire recipes, from start to finish, but I want you to go the easier route. Make a batch of quinoa and you can get creative with the rest. These recipes are to serve more for inspiration than for following line by line. To show you that with just a couple of ready made ingredients on hand, you can build a delicious, customized lunch bowl, just for you, just the way you like it. In about 15 minutes.

Here are some helpful tips to have the best, most effortless lunch week. The bonus-if you need to take this on the go, it's very packable.

Make a batch of quinoa-typically, 2 cups of water to 1 cup of quinoa would give one person plenty for the week

Look in the pantry for easy add ins


any kind of beans

canned tuna

canned salmon




pumpkin seeds


Look in the fridge

Topping warm quinoa over chopped lettuce will make it all soften and blend perfectly.

Veggies like carrots, peppers

Feta or Goat Cheese to sprinkle on top

Leftover chicken/ground turkey/etc

Eggs-Hardboiled/Scrambled/Over Easy



Sweet potato-remember my instagram live where I cut thin slices of sweet potato and put them in the toaster oven and made them like slices of toast? So quick and easy....

Look in the fruit bowl

Chop some apples

Add avocado

Citrus sections like grapefruit & orange
